RV Recipes: Traveling Pot Roast

Here is a version of Pot Roast that is superb for cooking on the road in your slow cooker, and will become a staple in your home kitchen as well! With a few simple, easy to find a keep on hand ingredients, you will find yourself going back to this recipe time and time again!

Ingredients:

1 ea. 2.5 lb Beef Roast

1 ea. Onion – Sliced

½ bag Peeled Baby Carrots

1 pkg. Dry Beef Gravy Mix

1 pkg. Dry Ranch Dressing Mix

1 pkg. Dry Italian Dressing Mix

¼ cup All Purpose Flour

1 cup Water (more if needed)

Salt and Pepper

Preparation:

Spray inside of slow cooker crock with non-stick cooking spray. Spread onion on bottom of crock. On work surface, spread out flour, set roast on top of flour and sprinkle with salt and pepper, then roll roast in flour to evenly coat. Press flour into roast with hands, then place roast in slow cooker. Whisk the three packets of mixes together with the water in a bowl and pour over roast. Place carrots around the roast and cover. Cook on low for about 8 hours or until the roast is fork tender and the gravy has thickened, serve and enjoy!

This roast pairs great with a side of potatoes and green veggie or salad if you would like! You can also add small red potatoes to the crock and cook with the roast for a one pot meal! Get creative with your sides if you choose to have any since the main dish is so easy!
